12 Days of Christmas: Day 6 – Holiday Peanut Butter Balls✨

On day 6 of the 12 Days of Christmas, I’m sharing the most delicious, crowd pleasing peanut butter ball recipe, because sharing is caring.

This recipe has been a favorite of mine since circa 2009 when bestie B and I decided it would be fun to do some holiday baking together and she brought her family peanut butter ball recipe to the table. True story: I still have the ripped, stained piece of computer paper that B jotted the recipe down on while getting it from her mother over the phone.

I will never replace it or recopy it onto an actual recipe card.

Here’s what you’ll need to get started:

  • 1 cup of butter
  • 2 cups of graham wafer crumbs
  • 1 cup of icing sugar
  • 1 tsp of vanilla
  • 1 cup of medium coconut
  • 1 cup of peanut butter
  • 2-3 cups of chocolate melting wafers for dipping the pb balls

Star by creaming your butter in a bowl – it helps if you’ve kept it at room temperature for easy blending.

In a separate bowl, mix together your graham wafer crumbs, coconut, icing sugar, vanilla and mix together.

When ready, stir in your butter.

Then your peanut butter.

For added fun, mix everything together with your hands – this was D’s addition to the recipe this year and admittedly, it’s totally fun to get your hands a little dirty. 

Next, shape your mixture into small balls. We yielded 48 balls from this batch.

Place them on wax or parchment paper and put in the freezer for 15 minutes to chill.

Then, melt your chocolate – we chose over the stove top for easy melting.

When chocolate is ready, dip individual balls into the chocolate and place back on the wax or parchment paper. Put in fridge to chill and VOILA! You’re done.

Or if you’d like to be an overachiever, you can melt a little white chocolate and get fancy by drizzling a wee bit on top of each ball. No pressure.
