It’s almost running season and for those of us in Atlantic Canada, Mother Nature has been making it easier than ever to get in runs after this March. With pretty much no snow, my favorite running trail is open and the conditions are good. Of course, regardless of the season, one thing always remains true for me as a runner: if I’m going to run after work, I’m going to need a snack.
As a busy professional, I’ve been known to eat of peanut butter (right off the spoon) or scarf down an avocado (because that’s normal) as I’m going out the door, but recently, D shared with me some treats from home and I just knew I’d found my new go-to after-work running fuel.
The easiest, tastiest, no bake energy bites there ever was.
Here’s what you’ll need:
- 1 cup of dry oatmeal
- 2/3 cups of coconut flakes
- 2/3 cups of peanut butter
- 1/2 cup of ground flaxseed (optional)
- 1/2 cup of mini chocolate chips
- 1/2 cup of honey or maple syrup (or combination of both)
- 1 tbsp of chia seeds (optional)
- 1 tsp of vanilla extract
Now, for the record, I left out both flaxseed and chia seeds as both are black listed by my digestive system, however if you’re a fan of either of these, I’m sure they make these even tastier and add even more fuel to the mix.
On to the no bake prep, mix all of the ingredients in a large bowl and chill in the fridge for 30 minutes.
Once removed, roll into balls that are about 1″ in diameter. This recipe will yield about 24 bites.
Store in the fridge in an air tight container or freeze, but either way, enjoy these little energy bad boys.
Warning: they are highly addictive.
