I’ve had a lot of people ask me for the recipe because I post shots of this dish on Instagram ALL the time. Well, the wait is over!
This Mexican dish includes some of my favorite ingredients: spices, cilantro, avocado and more. I’ve never really followed a recipe, so the portions of each ingredient are based entirely on how many servings you’re looking to make. For all intents and purposes, here’s how to make this dish for one!
What You’ll Need:
- 1 flour tortilla
- olive oil
- 1 to 2 eggs
- 1 tsp chilli powder
- 1 small onion (1/2 a medium to large onion)
- 3/4 cup crushed tomatoes
- 1/2 cup corn niblets
- 1 tbsp of fresh cilantro
- 1 small avocado
- Sour Cream (optional)
Start by chopping up a small onion into bite sized pieces and adding to a heated pan with a little olive oil. Simmer for 1 to 2 minutes before adding a 3/4 cup of crushed tomatoes, 1/4 cup of corn, and a tsp of chili power – a little more if you like things on the spicy side.
While your sauce is simmering, chop up some cilantro and fresh avocado – as much or as little as you’d like!
Next, heat a tbsp of olive oil in a separate frying pan. Once hot, add your flour tortilla to the pan and heat each side until it’s golden and crispy. Remove from the pan and replace with an egg or two that you will fry over-easy. Trust me when I say, a runny yolk MAKES the flavor of the huevos rancheros.
When your egg(s) is ready, place your golden tortilla on your plate, lay your egg(s) on top and cover with your tomato sauce. Garnish with cilantro, avocado, and sour cream and you’re ready to dive in!
